Conversation with my Grandmother in Kentucky

Nanny1: everyone was here yesterday and you would not believe the food that was consumed. i thought i had enough cooked for an army and it was all eaten before bedtime.
greyyhawkk: oh, i can imagine. my taste budds can imagine.
Nanny1: chicken and dumplings, cornbread dressing, green beans, peas, vegetable blend (cauliflower, carrots and brocolli) mashed potatoes, macaroni and cheese, tossed salad, rolls and butter, cake and fruit salad. the finest southern comfort food that can be found!

My mouth is watering just by copy & pasting this. Damn it. Damn it. Damn it!

GH- Being in the south, I had the chance to enjoy, hush puppies, catfish, fried pickles, and speckled butter beans (don't ask)!  The chicken and dumplings were ok yet kinda blande (sp?), I had to pass on the chitlins (um gross!) but the family was ok with that, Thank God!! NO CHITLINS FOR ME!!!!

Well theres a myriad... I think thats my word for the day... theres a myriad of great southern dishes. I don't like'm all either, but who likes everything they grew up with? I do have to say though: I have never ever heard of Fried Pickles! Wow. Country folk. We'll fry anything. Did you know my mothers maiden name is "Fryer". I'm not joking.  We fry unripe tomatoes even. The South does indeed have great hospitality. If you chose to live there... its a great way of life. I envy you in a way... this new start, though it came with an abrupt and heavy blow. Change, I feel it impending for me. it's in the air. You never know where life will take you next. I'm sure yours will be filled with much love and laughter.

ive heard of fried pickles.ive never had them but if i ever got the chance i dont think i would try them anyway it sounds kinda nasty....

I mean I think it sounds nasty. Except I'll try anything once. Even if its nasty. I want to know exactly HOW its nasty.  Thats how a friend got me to try a bowl of marinated jellyfish. I think it was raw. Nearly gagged. No, I think I did gag, but I finished it. Almost finished it, save for one piece.  I remember because the difficulty was due to the indestructible thin film sandwiched between two soft visible/edible layers. It can be down your throat being swallowed and then you realize that the thin film is attached to the end your still chewing. Thats when I gagged. Pulled that particular piece out. Now that was a Weird feeling. TMI? : )

My god John, I have been trying to figure out what your email meant since you sen it, I couldn't remember mentioning fried pickles, sheesh!  The fried pickles were great, I love fried green tomoatoes too if that is what you were speaking of.

Fried Pickles just taste like a dill pickles crunchy and fried in a light batter.  Glad I tried them, I hate pickles but they were really good.  Served with a light mayo/dill sauce.

All I can do is hope for a good change John, I fear change but I hope this will be a positive turn in my life.

Oh and I found you a recipe for jellyfish:

Sesame Jellyfish Recipe

Oriental Seafood Asian

Ingredients :

1/2

lb

Prepared shredded jellyfish

2

tsp

Light soy sauce

3

tbl

Sesame oil

2

tsp

White rice vinegar

2

tsp

Sugar

3

tbl

White sesame seeds, toasted


Method :

  • RINSE THE JELLYFISH WELL in cold running water and drain. Put it in a stainless steel bowl and cover with boiling water. Let the jellyfish sit in the water for about 15 minutes or until it is tender. Drain and continue to soak at least 6 times in several changes of cold water. Drain thoroughly and blot dry with paper towels and set aside. Mix soy sauce, sesame oil, vinegar and sugar in a small bowl. Toss the jellyfish well in this sauce and let it sit for at least 30 minutes. Just before serving, garnish with the sesame seeds.
  • Serves 4 as part of a Chinese meal or 2 as a single dish.
